Low Carb/Diabetic Friendly Courgette “Noodles” With Garlic & Basil Sauce…

Low Carb Noodles

Wow, I had this for lunch today, and it was SO yummy, I had to share it with you…!

It’s a slightly adapted recipe from here – and is basically:

  • three medium sized courgettes; “spiralized” or sliced into strips;

Then for the sauce:

  • The juice of a lemon;
  • 1/3 cup of water;
  • 1 avocado;
  • a generous handful of basil leaves;
  • 2 garlic cloves;
  • 1/4 cup of olive oil;
  • 1 teaspoon of good sea or himilayan pink salt.

Blitz all of the above (minus the courgette noodles!) in a food processor or blender, then mix well with the courgette “noodles”, cut a few cherry tomatoes and stir through, and season with black pepper… Et voila! Delicious, healthy “pasta” – but without the post pasta crash!

Serves 2… Perfect for the summer days ahead… :-) xo

  1. I just bought a spiralizer yesterday to make zucchini “spaghetti” noodles. I got the idea from reading the Against All Grain book. I saw your post and I am going to try your recipe! Sounds delicious! I am in a very similar situation as you in that if I do not eat much carb, I can go without insulin (I am also a diagnosed type 1- diagnosed in 2010). I take insulin so that I can eat more things, but I do like to try to manage my diabetes by eating a low carb diet so I can use only a small amount of insulin. I commend you for your efforts! I really, really enjoy your blog! ((HUGGS)) Nikki
