Wow, I had this for lunch today, and it was SO yummy, I had to share it with you…!
It’s a slightly adapted recipe from here – and is basically:
- three medium sized courgettes; “spiralized” or sliced into strips;
Then for the sauce:
- The juice of a lemon;
- 1/3 cup of water;
- 1 avocado;
- a generous handful of basil leaves;
- 2 garlic cloves;
- 1/4 cup of olive oil;
- 1 teaspoon of good sea or himilayan pink salt.
Blitz all of the above (minus the courgette noodles!) in a food processor or blender, then mix well with the courgette “noodles”, cut a few cherry tomatoes and stir through, and season with black pepper… Et voila! Delicious, healthy “pasta” – but without the post pasta crash!
Serves 2… Perfect for the summer days ahead… xo
