Oh. My. Goodness.
I’ve seen various avocado mousses on the internet for a while, but have never been drawn to try it; I mean why ruin some amazing raw chocolate by sticking an avocado with it?! Don’t get me wrong, I love avocado – and I love chocolate – but I really couldn’t see how the two would work together…
I can’t take credit for creating this, as it’s merely just my variation of many others I’ve seen on-line; but here’s my version:
- I ripe avocado;
- 1/4 of a cup of raw cacao powder;
- 1/4 cup of almond milk;
- 2 tablespoons of desiccated coconut;
- 1 tablespoon of yacon syrup or coconut nectar;
- A capful of orange essence;
- To decorate, a sprinkle bee pollen, almond slivers, and cinnamon.
With a hand blender or food processor, whizz the avocado first till it’s completely smooth, then add the cacao powder and almond milk and whizz again… then add your sweetener of choice (if you aren’t watching your sugars then I’m sure maple syrup would also work well. Also, you can still taste the bitterness of the cacao with one just one tablespoon of sweetener, which I actually like – but you may prefer to add two tablespoons of sweetener, depending on your taste preference), plus the desiccated cococonut and orange essence, and give a final whizz till it’s super smooth.
Pop into containers of choice; makes two decent sized mousses in small bowls (or in my case, teacups!) – but could be stretched to three if you were using ramekins as containers.
Sprinkle some almond flakes on top, then some bee pollen, and finally a pinch of cinnamon.
Although they don’t need to ‘set’, I recommend trying to leave them for at least an hour as I think the flavours nestled into each other better that way… but hey, I understand it might be tricky to wait that long… ! ;-)
Either way, this is a truly incredible treat that I still *cannot* believe I didn’t try before – it’s sooooo good, and so good for you too! Hoorah!!
