Prior to my diabetes diagnosis, I was a bit of a sucker for ice-cream… I wouldn’t eat it straight from the freezer though; oh no – I’d wait for it to melt till it was almost liquid, then eat (drink) it. It was almost a thick milkshake – and the flavour was invariably chocolate, obviously ;-)
Anyway, then I found out that dairy was probably the *number one* culprit for my antibodies in my pancreas going nuts; and suffice to say dairy was OFF the cards and out the window.
So today, when I experimenting with a new smoothie; imagine how super pleased I was when I tasted this one and it tasted just like; melted chocolate icecream – in a glass!! Squee!
It was super simple and just three ingredients:
- 500 mls almond milk
- About a quarter to a third of fresh coconut flesh (yes, it does mean smashing a coconut open; I opened my first one for this – it was easy peasy, honest!)
- 1 teaspoon of carob powder
Whizz in a high speed blender; and enjoy the thick, creamy and amazing no chocolate, no sugar, no dairy “chocolate milkshake” ~ I know it sounds too good to be true, but trust me, it isn’t!
In fact I’m making that again tomorrow… well, I’ve half the coconut left; have to, really ;-)
